AD Singh has been a restaurateur since 1990, so it has been 33 years since he opened his first restaurant. Around 23 years ago, he started Olive Bar & Kitchen in Bandra, Mumbai. Three years later, AD Singh expanded Olive to Delhi’s Qutub area. 20 years on, AD Singh’s Olive Group is one of the most prominent names in the Indian food industry with renowned restaurant brands like Monkey Bar, Soda Bottle Opener Wala and Lavaash By Saby apart from Olive. Over a long and illustrious career, AD Singh has taken the Indian restaurant space from one that just catered food to one that creates and curates food experiences the Indian foodie will never forget.

Chef Karan Suri started his culinary career with the esteemed Oberoi Group in New Delhi in 2005 as kitchen executive. Chef Varun Inamdar is one of the top Indian celebrity chefs today. He has served Barack Obama, Nicholas Sarkozy, Vladimir Putin, Narendra Modi, The Bachchans, Khans and Kapoors with flaring passion! Known as ‘The Prince of chocolates’ he is an Ambassador of Ecuadorian cocoa in India. He’s also the author of ‘Celebrate Life, Food and Wine.’ Inamdar is also the Brand Ambassador of Ecuadorian cocoa in India, representing the country at global forums. As a chocolatier, he has made a 6-foot-tall Chocolate Mannequin and Chocolate Ganesha. Varun Inamdar has been showcased on Master Chef India and hosts ‘The Bombay Chef,’ a web show in collaboration with Rajshri Entertainment.

Karan Mittal is the head chef at @feringhee_arizona and @baarbaarlosangeles. He has won “The Rising Star of the Year 2018” at the Food & Wine Awards, Ireland. He won “Best Young Chef of The Year 2018” at the Irish Curry Awards. Ananda was awarded ‘Best Restaurant in 2018’ by Good Eating Guide and Karan’s tasting menu was featured in “The 7 Top Tasting Menus in Dublin” by Image Magazine. He has done a few cooking demos at Taste of Dublin, Dublin Bay Prawn Festival, Electric Picnic and other live events. He entered the Euro toques young chef of the year competition in 2019 and made his way up to the finals. He got the opportunity to cook for his idol Chef Michel Roux Jnr and received great appreciation for his work and skills.

Chef Mano Thevar: Inspiring Desi of the Day

Born and raised in Penang, Mano Thevar cut his teeth as a chef in Michelin-starred Guy Savoy and Waku Ghin restaurants. He opened his first restaurant, Thevar, in Singapore in 2019. The establishment champions fine Indian and South Asian cuisines that incorporate European techniques and Japanese produce.

His inventiveness has paid off handsomely, with Mano earning its first Michelin star in 2021. This year, the restaurant was awarded two stars from the prestigious food guide.

Thevar now has the distinction of being the first Malaysian chef to have two Michelin stars under his belt.
