Prateek Sadhu: Inspiring Desi of the Day

Prateek Sadhu is the Chef and Founder of @restaurantnaar. Sadhu, hails from Kashmir. During his time as a chef at Mumbai’s celebrated restaurant Masque, Sadhu – an alumnus of the Culinary Institute of America with stints at Alinea, Noma and The French Laundry behind him – shot to fame for his ability to bring lesser-known Indian ingredients to the fore, marrying them with complex cooking techniques. The restaurant is now a regular on the Asia’s 50 Best Restaurants list, coming in at No.16 in 2023 as the highest-ranking establishment in India. Sadhu has won GQ Men of the Year award India 2023.

Chef Simran Singh Thapar: Inspiring Desi of the Day

Simran Singh Thapar started his career at the Oberoi group where he rose to be Executive Chef of Sukhvilas near Chandigarh. He followed this up with a stint at the JW Marriott in Mussoorie, where he won a reputation for working with local ingredients that rarely made it to restaurant menus.

As Executive Chef at the Leela Palace Udaipur he has continued to work with unusual grains and to reinterpret traditional dishes in his own way.

Chef Vanshika Bhatia: Inspiring Desi of the Day

Vanshika Bhatia is the Owner & Chef Partner @petitepieshop.in @omo.cafe @chefsmanifesto. She started out as a pastry chef but, went on to work in various capacities at restaurants around the world including Gaggan in Bangkok, Junoon in Dubai and Noma in Copenhagen. Her range now extends far beyond pastry and she is part of a new generation of chefs who run waste-free kitchens and use classical techniques to create new dishes with local ingredients.

Chef Rahul Rana: Inspiring Desi of the Day

Rahul Rana is the Executive Chef of Avatara restaurant in Dubai. Hailing from the northern part of India, Rishikesh, Chef Rahul has been raised at the foothills of the Himalayas. Since it was a tourist destination, he has grown up having an innate understanding of different cultures and cuisines. He grew up in a predominantly vegetarian community, which exposed his intrigue towards food and exploring different possibilities with it. Chef Rahul’s innovative culinary skills and passion for vegetarian cuisine earned him the title of Future Great Chef of the Year during the Gault & Millau UAE 2023 awards, cementing his place as a rising star in the industry.

Chef Danish Khan: Inspiring Desi of the Day

Chef Danish Khan is a gold medalist Indian pastry chef. Chef Khan started his stint as a pastry chef with Hotel ITC Maratha, Mumbai and then moved on to work with other brands such as Shababik International, Jeddah Kingdom of Saudi Arabia, and JW Marriott. He was the Callebaut Patisserie of the year 2019, a Gold and Silver medalist in South Indian Chef Association(SICA) and World Association of Chefs’ Society(WACS).

Karan Gokani: Inspiring Desi of the Day

Karan grew up in Mumbai and moved to England in 2005 to study law. In 2012, he left his legal career at a city law firm to pursue a career in hospitality, traveling across India and Sri Lanka to immerse himself in the food and culture of the countries. His restaurant Hoppers was founded in October 2015. The first Hoppers in Soho was inspired by the toddy-shops, home cooking and roadside stalls of Sri Lanka and South India, and served its namesake Hoppers alongside Dosas, Kothu, Short Eats, Rice and Roasts. Over the years Karan has written travel features and recipes on Sri Lanka and southern India for major national and international publications including The Sunday Times, The Telegraph, The Guardian, National Geographic, Conde Nast Traveller, The ES Magazine, Bloomberg, The Financial Times; and appeared on Sunday Brunch, Great British Chefs, Sorted Food’s YouTube channel and various food festivals across the UK. 

Chef Tarun Kapoor: Inspiring Desi of the Day

Tarun Kapoor, based in Atlanta, is currently an Executive Chef at Sodexo, bringing experience from previous roles at Bon Appétit Management Company, Bon Appetit Food Management Inc., Mint Indian Bistro and Addison group. Tarun Kapoor holds a 2004 – 2007 MBA in Human resource and operations from IMT Ghaziabad. He is the winner of Culinary Awards: MasterChef 2010 & Chef of the Year 2011 (WACS – India. Tarun is also an accredited Culinary Judge by World Associations of Chef Societies (WACS – International), and winner of Senior Chef Category Qatar 2013

Anjula Devi: Inspiring Desi of the Day

A respected food writer and author, Anjula started cooking with her father at the age of eight. At that time the ingredients for Indian cuisine were not as readily available as they are now and Anjula travelled on the number 207 bus with her father to Shepherd’s Bush Market where they would buy a selection of spices, fresh fish and Indian vegetables. Utilising her cookery skills and passion for spices, Anjula launched her own business in 2010, Anjula Devi Authentic Indian Food, providing Indian dinner parties and Indian cookery classes. Anjula has created a range of authentic recipes for Manchester United, arguably the biggest football club in the world, where she is a consultant chef. A Brand Ambassador for TRS Foods, the world’s largest Indian food company, Anjula has also launched her own brand, Route 207, inspired by the bus route she used to take to the spice market.
